Pea and braised baby leeks. Leeks are a good source of the prebiotic inulin that helps feed the good bacteria in the gut and pea and pea shoots are a great source of folic acid.

Tomato and black lentil salad with chive blossoms and lemon zest. Tomatoes contain lycopene an antioxidant that can protect skin from sun damage, black lentils are rich in minerals and have a higher flavonoid content than paler lentils.

Mango with macadamia nuts and mulberries. Mangoes are a great source of beta carotene that can boost skin health - combining mango with macadamia increases the bioavailability of the beta carotene as it is a fat soluble vitamin.

Brussels sprout and purple sweet potato salad with fresh horseradish and dill. Brussel sprouts boost the immune system, purple sweet potatoes are loaded with polyphenols and horseradish purifies the blood and helps fight cold and flu symptoms.

Apple, passionfruit and fenugreek sprouts. Fenugreek is perfect to eat throughout winter to clear congestion and cleanse the lymphatic system. Consume as sprouts or make a tea with the seeds.
